For Sally Richardson, the driving force behind Otways Distillery in Forrest, this allows greater control when it comes to exploring new tastes and techniques. Sally and her trusty mentor, the experienced Brunswick-based micro distiller Wayne Bourke, have a passion for creating quality gin. They experiment with flavours, craft their product carefully and create a wonderful experience for gin enthusiasts across the country.

While collaboration during the distilling process is vital, strong relationships with locals in the Otways region is just as necessary when it comes to sourcing the varied botanicals needed to infuse flavour into gin.

The Otways has been growing great produce for years. From cool-weather wines to mouth-watering fruit and vibrant herbs, it’s a micro distiller’s paradise when sourcing high-quality ingredients to add vibrant punches of flavour as well as subtle notes.

The distillery team collaborates closely with locals, which allows them shine a spotlight on both native and farmed botanicals and foods of the Otways. The results are extremely satisfying.
